September Goals

Good Morning!! 

Happy Tuesday! I'm so glad yesterday was a holiday. We caught up on laundry, did some meal prep and went to visit Chris' grandpa. His birthday was Sunday so we went to say hello and happy birthday. It was a great day off. We even got to bbq some wings! Recipe coming soon! 

So since its already September (I know I can't believe it either) I thought I would do my monthly goals again. 
I really can not believe its September. Its my favorite time of the year. Football games, cooler weather, racing, fall colors, pumpkin EVERYTHING and the start to all my favorite holidays! 
Although I'm sad to see summer end I'm super excited for all the holidays to come. It's going to be so fun this year with Miss O. 

Speaking of goals here's how I did with my August goals.
I did run/walk 60 miles which I think it pretty good. I was only 10 shy of my goal which is probably the closest I've been in a long time. 
I did meal plan almost every week. There was one week I planned for only a few days and quickly remember how awful it is not to have a plan. 
September meal planning is going to be amazing since I just started my 21 Day Fix

I didn't lose 8 pounds but I'm ok with that. I lost a few inches and right now as much as I hate not seeing the scale move I'm not letting it stress me out.

Race Recap: Labor Day Dash 5k

Hello Friends! 

I'm so happy today is a holiday and another day off. This weekend was crazy busy. It will be nice to just relax and hang out! 

Saturday I had a 5k. First race in about a month and first run I've done in about 8 days. I don't know what my problem was but I just needed a little break but after my race I can't wait to get out and run again! 

I think I just needed a little break. But I'm ready to start running/training again. 

The Labor Day Dash was part of the Healthy Holiday Fun Run Series I've been doing. My mom and cousin did this one with me too. This one was downtown Lee Summit. It was a great race. I've had a few other races downtown Lee Summit and I always love running it. 

It was super sticky but other than that it wasn't to hot out yet. 

There was a great crowd out for the race.

There was about 600+ people running this race. 
I am starting to notice people that have ran in the series at the other races. I think that's pretty cool. I need to work up the guts to actually talk to these people! 

The course was amazing. No hills. Ok maybe there was a tiny one but thank goodness nothing I couldn't handle. Nothing like the last race. 

The best part of about the race was there was a farmers market right by where we parked. It was small but amazing! There was so much fresh things. I got some apple, zucchini and grape tomatoes. I was pretty excited!

Healthy Cheesy Potatoes

How was your Monday? 

Can you believe I actually have a recipe for you! I know I can't either. I was giving up on the recipe part of my blog. I will make some amazing and delicious recipes, get super busy entertaining Miss O and a million other things while dinner cooks then forget to take pictures. I'm usually half way through my meal when I remember. 
So, I'm pretty freaking exited I have one to share with you today. 

A few weekends ago while we were in Springfield. We headed over to a friends for dinner. They were making delicious wings, cheesy potatoes and corn on the cob. We brought the corn which was a hit. But to me the potatoes were the biggest hit. I mean they were cooked just perfect and soooo cheesy. I just knew they couldn't be good for me and probably had cream of something in the recipe. I did change a few of the original ingredients but I promise you'll never know. 

I remember asking Corey what was in the potatoes and she simply said a little chicken stock, a little sour cream and a few other things. I asked if they was any canned cream of anything and she said no. 

By this time I was dying to try the recipe myself. So, last night I did. In fact, we had them with wings. 
Clearly we are missing our dear friends! 

Now, I know your going to think, "gosh, there's so many steps to this" because that's totally what I thought too. But after making it this is totally what I'll be taking to family dinners from now on. One its healthy two its delicious EVERYONE will love! 

Serves: 6-8
Prep time: 30 minutes
Cook time: 50 minutes 

  • 3 pounds potatoes, peeled and diced
  • 4 tablespoons butter, unsalted
  • 1 garlic clove minced
  • 2 1/2 tablespoons whole wheat flour
  • 1/2 chicken stock, low sodium
  • 1/2 1% milk
  • 1/2 cup Greek yogurt, plain
  • 1/2 tablespoon parsley, chopped
  • 1/2 cup sharp cheddar cheese, grated 
  • pinch of salt and pepper
  1.  Add potatoes to a pot of cold water and bring to boil. Boil about 10 minutes. 
  2. Remove potatoes, drain and let cool. Preheat oven to 350 degrees
  3. In a skillet melt the butter over medium heat, add garlic cook for one minute. 
  4. Sprinkle in flour, stirring about 2-3 minutes. 
  5. Stir in chicken stock and milk. Continue to stir until thick, about 5 minutes. 
  6. Remove skillet from heat and stir in Greek yogurt. 
  7. In a large bowl add potatoes, Greek yogurt, cheese, salt and pepper. 
  8.  Pour mixture in a casserole dish that's been sprayed with cooking spray. Sprinkle more cheese if you want. 
  9. Bake for 50 minutes.

A New Start

Good Monday Morning! 
Another weekend come and gone. It was a great weekend. Friday Miss O and I hung out at home while the hubs was coaching football. The game was 2 hours away so we didn't go. Saturday I got a whole day baby  free. It was amazing! I mean I love Miss O so much but I got to walk around a new health food store I've been wanting to go to and Target with no one crying, yelling or trying to climb out of the cart. It was amazing I tell ya! 
Sunday I went to lunch with my bff then grocery shopped. You know the fun stuff. 
Friday when I was home alone and after Miss O went to sleep I got to thinking about this losing weight thing. Its so not easy. I wish it was, but then again I'd probably already be a size 4. Which I don't really ever have any plans for. 
You know I could do the whole Paleo thing again. I lost most of my baby weight that way. But I know its something I probably wouldn't stick with long term. Counting Calories sucks but it seems to be the easiest thing to do.  I hope to one day not have to follow a diet or plan to just wake up and eat.

Good Monday Morning!! 
Ugh another weekend has gone. I hate how quickly the weekends really are. And the fact that this was the last weekend before the hubs starts school pretty much sucked. We had a great weekend. Not looking forward to him going back to work. 
We didn't really do much. Went to a birthday party and hung out at home. Cleaned. Haha you know all the fun stuff adults love doing. 
Remember last weekend we were in Springfield. Well my dear friend Corey took some family pictures for us. We haven't had any since Miss O was 3 months so it was overdue. We've just got pictures of her by herself. 
Corey knows just what I'm looking for in photos. She's amazing guys. I love love love her work. And I swear I'm not just saying that because I happen to be close friends with her. 
So today I thought I would share some of you guys! 

Aren't they just lovely! I can't wait to get some for my wall!!
